Happy Valentines Day!! We always make heart shaped pizza with our boys for Valentines Day dinner, but last night we had this soup. We had a major blizzard here and it put me in the mood for a nice warm soup! I had some cauliflower I wanted to use–so I looked at two recipes from the Joy of Cooking–a cheese soup and a creamy cauliflower soup –and came up with this! It was delicious and really hit the spot

Creamy Cauliflower & Cheese Soup
submitted by Melanie~The Sisters Cafe

Heat in a pot, on medium low, until butter melts:
1/4 cup broth
1 Tbspoon butter

Then add and simmer covered for 10 minutes, stirring occasionally:

1 roughly chopped onion
2 sliced cloves of garlic
1/8 tsp ground nutmeg

Next add the following, bring to a boil and simmer for 20 minutes or until tender:
4 1/2 cups chicken broth
1 medium head of cauliflower, coarsely chopped

Turn off heat and allow to cool a bit. Then puree the mixture until smooth. Return to the pot and stir in:

1/4-1/2 cup cream, half-and-half, or milk (I used milk)
2 cups of cheddar cheese (I used Tillamock Sharp)
salt and pepper to taste

Simmer until cheese is melted. Dont’ let it boil! Enjoy!

Where would we be without our lovely and talented Mom? We developed our love of cooking at an early age "helping" our Mom bake cookies, make dinner, and knead bread. She had quite the well of patience! She is the one that taught us about measurements, leavening agents, egg-washes, the basic white sauce, and numerous other mysteries of the kitchen! All of us cherish the memories we have of learning to cook with our Mom at our side. Thank you Mom! You instilled in us a respect for work as well as a joy in creating delicious things. We love you!
