South of the Border Sandwiches

These sandwiches are one of my all-time favorites! They are easy to make and are festive and colorful.  They taste even better than they look and are a hit at get-togethers!

Yum, I have heard so much about these – I’m serious. I’ve been meaning to ask you for the recipe. I am excited to try them out. One question – when you say french bread “sliced” does that mean sliced down the middle lengthwise to make one big long sandwich, and then to serve it you slice it? It sounded like that from the directions…

No, you cut the french bread in about 1″ slices widthwise (is that a word:) and make a bunch of individual sandwiches before you cook it. By the way, I have also used whole wheat (I think it was french) bread from Costco and I thought it was just as good.

Okay, Amy, this was absolutely DELISH. I took a picture of it when I made it for my fam tonight (like we talked about :)), and posted a picture with your recipe. I am totally going to make these the next time I have friends over for lunch. So yummy! PS- I really liked the pepper jack cheese with it.
