Cape Cod Apple Nut Carrot Muffins

Oh, these are so delicious. I got this recipe a few years ago from my friend, Josie. These are packed with yummy and healthy ingredients, and they are so moist. Mmmmmm, this is one of my favorite muffin recipes. Hope you enjoy them as much as me!

Cape Cod Apple Nut Carrot Muffins

2 c. flour
1 c. sugar
2 tsp. baking soda
2 tsp. cinnamon
½ tsp. salt
1 c. oil
2 c. shredded carrots
1 lg. apple shredded
½ c. chopped walnuts
2 tsp. vanilla
½ c. raisins
3 eggs

Mix dry ingredients together. Then add remaining and mix. Fill muffin tins 2/3 full. Bake at 350° for 20-25 minutes. Makes 18 muffins.

Hi Erin,

I found your blog on my sister-in-law, Danette’s blog. I am a huge fan of you and your sister’s recipes. I love this blog and check it daily. I told Danette how I make many of the recipes and love them. She said I should comment and let you know. I wanted to but didn’t want you to think I was some crazy girl out there. I am just a normal, stay at home mom who loves new ideas for recipes! So thanks for sharing!

Hi Erin,

Oh good! I am glad you are sharing this blog so generously! I will then admit that I have passed it along to some of my good friends who love to blog and get good recipes and ideas. They too have commented on how they love The Sisers’ Cafe!

Tonight I made the Chicken and Spinach stuffed shells. They were delicious! I make Manicotti a lot, so this was a little change up. My husband and kids loved the flavor. I think the cream cheese really gives it a different taste.

these muffins were so GOOD!!! I was afraid I wasn't going to like them..but i did. I gave some to my two year old and he loved them. I'm glad he is getting some veggies=)

Anyways, i have to tell you the story about how I found your blog. (which I have been using for 2 weeks now and planning my dinner meals with). My sister Hayley vanbeever said I needed to check it out. So i did. Then my husband saw the blog on the computer and said how do you know these sisters. I said from my sister Hayley. he then said I grew up with them in my home ward. My husband is Paul Mosley son of Steve and Charlotte mosley (phx,AZ). It is crazy how small the world can be.
Thanks for the great recipe. I have been passing it on to ward members.

Just made the muffin's today just wondering if you if subbed all or 1/2 of the oil with Applesauce and if they turned out?

Hi Diana!
I haven't ever substituted applesauce for the oil in this recipe. I wouldn't sub out all of the oil if it was me, but a partial substitution would probably be great. If you try it out, let me know how it goes!

I made these last week and they were wonderful!! My two boys gobbled them up and I was happy to sneak some carrots into them! :) My husband was scared to try them (because of the carrots) but finally he did and he thought they were yummy too. These will become a regular treat in my house!
