Blueberry Sour Cream Pancakes (yum)

Oh, these are my very favorite pancakes! They are delicious, delicious, delicious. I don’t have time to do them complete justice, but take my word for it – these are worth making! :)

Blueberry Sour Cream Pancakes

2 c. all-purpose flour
¼ c. sugar
4 tsp baking powder
½ tsp salt
2 eggs
1 ½ c. milk
1 c. (8-oz) sour cream (I always bake with light sour cream)
1/3 c. butter, melted
1 c. fresh or frozen blueberries (I use frozen)

Combine dry ingredients in a bowl. In another bowl, beat the eggs. Add milk, sour cream, and butter; mix well. Stir into dry ingredients just until blended. Fold in the blueberries. Pour batter by ¼ cupfuls onto a greased hot griddle; flip when golden on bottom. Cook until the second side is golden brown.

These are great! I use this recipe all the time–but I use 1/2 freshly ground wheat flour. They are one of our favorite pancake recipes!!

Yum! I can’t believe I’ve never tried these and I’ve heard you rave about them for awhile now! This is definitely on the menu for our next “big” breakfast.

I made these today and they were delicious. I did have a problem on a few of them where the batter was not fully cooked around a few blueberries. I used partiallw thawed berries and just dropped them into the pancakes, instead of mixing them into the batter. Not sure what happened. I just started to make the pancakes thinner. If you have any tips, let me know. My husband absolutely loved them, he had 8 of them.

I just left a comment at Laura’s food blog, but I should add here that I also drop the frozen blueberries into the individual pancakes too (still completely frozen), because otherwise the batter could turn blue from folding them in. You can do it either way. (And I haven’t had the problem of uncooked batter around the berries before…)

I just made these for dinner, but my kids would never eat the berries whole. So I just mixed it all up in the blender. My kids think the purple pancakes are awesome. They may not be as fluffy, because they were blended, but they tasted great.
