Fiesta Chicken Pasta Salad

I think this might be my favorite pasta salad. It’s really yummy (it’s hard to stop eating) and it is incredibly easy and quick. Last week I had two crazy-busy days and I ended up making a half recipe of this for dinner one night and then I finished off the package of dip mix for a second batch a few days later. All but the dressing mix, these are staple ingredients that I always have on-hand. So I just try to keep a package of this dip mix on hand too, and then I have a quick and delicious dinner whenever I need it. Hope you like it!

 

Fiesta Chicken Pasta Salad

1 pkg Hidden Valley Fiesta Ranch dip mix
½ c. oil
½ c. vinegar

 

1 lb cooked, shredded chicken (about 1 ½ to 2 breasts)
3/4 box garden rotini
1 can black beans
1 can black olives, halved
2 -3 tomatoes, chopped
Frozen corn 

Mix dressing mix, oil, and vinegar in small bowl and set aside. Combine chicken, cooked pasta, beans, olives, and tomatoes in large bowl. Add dressing and frozen corn about 20 minutes before serving. Be sure to toss again just before serving, as the dressing will seep to the bottom.

Erin, this is one of my favorite recipes. I make it all the time. I usually make a big bowl of it for a dinner and then eat it everyday for lunch until it’s gone. It is sooooo good!!!

Ok. I just made this and ditto to everyone else who has tried it.
I’m so pumped to have a new summer pasta recipe. I wear out the others and so having a new one to wear out makes me oh, so happy!!

I made this yesterday, but only with beans and corn. I also added some cucumber from the garden. I didn’t add chicken because I was serving this as a side. My kids and I loved it. My 4 year old said we had to stop eating it so we could save some to take to the field. (We are putting up hay for our cattle right now and we take supper to the field). So we did and it was a hit with them also. Thanks for the recipe!!!!

Danette told me I had to make this salad. I did and was glad. My husband, who isn’t usually a fan of a pasta salad, loved it! I am a terrible cook, so it is rare that I please him in this area. Thanks for helping me do that!:)

Just made this for a huge “Cancer Free” Celebration! It was a hit!

I omitted the olives and added avocado and cucumber! Thanks for all your awesome recipes that make me look good!
