Rhubarb Muffins

by Melanie on August 28, 2008

Our cousin Mindy Halladay shared this recipe with me. I actually have a very prolific rhubarb plant (planted by the previous owner), so I am always looking for ways to use it. Mindy had told me when I was recently up in Canada for a visit, that she had a great rhubarb recipe. I was very happy when I received the email, and even happier when they turned out so delicious! These are really really good! Thank you Mindy!!

Mmmm… I love rhubarb. Do you still taste the tartness of the rhubarb or are they really sweet?

Hi Melanie this is Janet Henrie’s daughter Keri and I love reading your blog! I was just wondering about your rhubarb does it all have to be red? Alot of rhubarb I’ve seen is mostly green? And I am just assusming that it’s not ripe.

These might be the trick to teach hubby, he really does like rhubarb. Wish me luck.
