Zuppa Toscana

To be honest I am not a big fan of Olive Garden… but I love their soup! This recipe will knock your socks off! It is adapted from one I found on Stephanies Kitchen. With all that green yummy kale, it’s like soup and salad all in one! Ha! :) I serve it with steaming hot breadsticks and call it dinner! Easy and scrumptiousZuppa Toscana

1 lb ground sausage (regular or spicy)
3 large red potatoes, sliced in half and then sliced into 1/4 inch thick slices
1 large onion, sliced
3 cloves garlic, minced
8 cups chicken broth
1 cup heavy whipping cream
1 bunch kale, chopped
freshly grated Parmesan cheese
salt and pepper to taste
3/4 teaspoon crushed red pepper flakes (*see note)Brown sausage in large soup pot. Remove sausage and set aside. To the pot add chicken broth, potatoes, onion, and garlic and bring to a boil. Simmer until potatoes are tender, about 20 minutes. Add cream and sausage to the pot and warm through. (Do not boil) Add kale several minutes before serving. Top with freshly grated Parmesan cheese. Delicious!!
* If using spicy sausage, you may want to omit the red pepper flakes…unless you like eating fire! :)

    WOW WOW WOW! I made this for dinner tonight and I totally gorged myself. It was SO incredibly good. I just LOVED the kale in it. I wasn’t so sure about the entire bunch of kale, but I did it anyway, and it turned out fantastic. I added chicken bouillon and it had great flavor. I seriously loved this! I couldn’t stop eating… I even finished off Benjamin’s bowl when I was doing the dishes! :)

    This is one of my favorites soups. I measured the kale this time because heads of kale can vary so much in size. This time I used about 4 cups. How much do you usually use?

    Hi! My husband recently came home raving about this soup he had just had!!!! I looked at the recipe….I love love love kale and who doesn’t like sausage and potatoes?!! I made it the very next day and was just in awe!!! It is delicious!!!! My favorite soup ever!! We really do not eat at Olive Garden so we have no idea how their soup taste….but why do we need to now?!!! This soup is fabulous!!! Thank you so much for sharing :))
