Nana’s Lemon Cake

It seems like everyone has been talking about lemon desserts or making them… and it kind of put me in the mood! So I gave in to my craving and made my Nana’s lemon cake. This is one of those desserts that takes me back to being a little girl. My Nana was the type of person who put nuts in only half the brownies just so everyone was happy. She was such a sweet person! And this cake was something she made all the time. Even now, it makes me happy to eat it because it reminds me of her so much. Of course, it just happens to be absolutely delicious, too! Amy made it in a bundt pan and brought it for my son’s baby blessing this year… it was a hit, of course. The glaze is what makes this cake. Make sure to poke lots of holes before drizzling it on.
Nana’s Lemon Cake

1 yellow cake mix
1 small package Lemon Jello
4 eggs
3/4 cup water
1/4 cup flour
3/4 cup oil
Glaze:
Juice and zested rind of 2 lemons
2 cups powdered sugar
Mix all ingredients together. Bake in greased and floured 9 x 13 pan according to directions on the cake box. While baking make glaze using wire whisk. Before the cake cools, poke with fork and pour glaze all over.

I love lemon, and this sounds fabulous! The jello in the cake is such a great idea. I bet it adds moisture and flavor. Yum!

My mom made this all the time growing up. It is such a moist, dense cake – I love it! To me, it is the “only” lemon cake.

My aunt makes this same recipe, but adds in 1 T. of Poppy Seeds in the cake — delicious!

My family has been making this cake for years. My husband requests it every year for his birthday and ends up eating almost the entire cake himself. Glad to see someone else has great taste!

I made this cake this past Sunday- sooo good! I split it into two disposable foil pans and took one to a teenage neighbor for her birthday and took another to dinner with friends. Everyone loved it!

Kristen, it is just regular old lemon jello. Not instant pudding. Is that what you meant? I actually made this yesterday. Sooo good! Hope you like it!
