Fresh Tomato Basil Pasta

This is one of my favorite summer dishes. We make it a lot at our house. It is so simple, healthy, delicious, and best of all …it uses glorious summer bounty from your garden or local farmers market.

Fresh Tomato and Basil Pasta

2 large ripe, firm tomatoes, diced (about 2 cups)
1 Tb fresh chopped basil or 1 tsp dried basil
1-2 cloves fresh garlic, minced
½ tsp kosher salt
1/8 tsp fresh ground pepper
Shredded Parmesan cheese
6-8 oz angel hair pasta ( we prefer whole wheat)Mix together the diced tomatoes, chopped basil, minced garlic, salt, and pepper. Let “marinate” on counter for 30 minutes. Cook the pasta al dente. Drain and toss with the tomato mixture. Serve with freshly grated Parmesan. Mmmmmm

I was wondering what to make for dinner…this sounds perfect. I love this recipe! I want to try to cook more healthy and with less meat so this will be perfect. Looks like you are up and cooking again in your new kitchen. I'm still waiting for photos!! :)

This looks like the perfect summer meal – maybe a few pine nuts added in would be good too. Can't wait to try it after we get home from our trip to Utah!

the pine nuts idea sounds great. I'm making this for dinner and I'll try it out with toasted pinenuts. I LOVE this recipe (I know I already said that) but I had to tell you how pretty those pictures are! I wish I had your photo skills sis!

I made this last night and my kids LOVED it. Even the ones that said they don't like tomatoes. :) And I loved how healthy it was. Yum.
