Oh my…this is quite possibly my favorite bar cookie EVER! Honestly I try not to make these cookies too often because I always eat too many! It is one of those treats that I can’t stay away from. I just take a smidgen here and cut off a tiny slice there and pretty soon half the pan is gone! With that in mind, you may want to make this when you have people around to share it with! They are decadent and delicious. They are also super easy to make since you use caramel sauce versus unwrapping actual caramels. I will say that I don’t really like this treat right out of the oven. For me these cookies are much better after they are completely cooled and set. Hope you enjoy!**PS Have you noticed that we are changing our blog design? Crust:
1 cup flour
1 cup quick oats (sometimes I use regular)
3/4 cup brown sugar
1/2 tsp soda
1/4 tsp salt
3/4 cup butter, melted

Filling:
1 cup chocolate chips (I like milk for this)
1/2 cup pecans, chopped (I never add these but good)
3/4 cup caramel topping
3 Tablespoons flour

Mix flour, oats, sugar, soda, salt and butter. Press half of the mixture into a 11×7 pan and set the other half aside. Bake at 350 for 10 minutes. Remove from oven. Sprinkle with chocolate chips and chopped pecans (if using). Blend 3/4 cup caramel with 3 T. flour. Pour (drizzle) over chocolate chips. Sprinkle the balance of the flour oat mixture over the dessert. Bake at 350 for 15-20 minutes or until light brown. Allow to cool and set before slicing.

 

**FOR a 9×13 size pan use these quantities of the ingredients and follow directions above

Crust:
2 cups all-purpose flour
2 cups quick-cooking rolled oats
1 1/2 cups firmly packed brown sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cups butter,
softened

Filling:
1 (12 1/2 ounce) jar caramel
3 tablespoons all-purpose flour
1 (6 ounce) package semi-sweet chocolate chips (1 cup)
1/2 cup chopped nuts

I love the new design with the white background. It makes it easier to read! It would also be great to have a search feature on here. I've seen it on other blogs, but really have no idea how you do it! Thanks for sharing all your great recipes!

I just had to say that I LOVE the white background. I enjoy the recipes on here, but if I'm honest the black background was a turn off. It was so hard to read! Everything looks great now!

I am excited to make these for my family. They are in love with anything caramel. I love finding fun recipe's with caramel because it helps me to not eat the treats because I don't like caramel.

Hi this is Raelynn Brittanys friend in Washington and I just bought a Blendtec a month ago and I love it but I was wondering what all you use it for and if you put the whole apple in the machine. I am sorry I really want to use this machine and make yummy things in them. My kids love the shake in the morning as well. Except I struggle with the apple part. If you have time I would love to know what all you use the blendtec for and if you put the whole apple in the blender or not.

I'm liking the blog re-design, too!
I made these Carmelitas tonight – wow. I made them in a 9×9 pan and it was perfect. I didn't have quite enough carmel, so I can only imagine that they'd be even better with the proper amount. Thanks!

Amy's sister, Melissa, made a dessert kind of like these for Logan's baby blessing. They were so good. I am excited to try these, too. Griff and I are suckers for caramel, so I am sure we will love these.

These look so delicious, I'm dying to try them! I was wondering about the size of the pan, though… At first glance I thought it said 11×17. Is 11×7 really the right dimension? I have to say I don't think I've ever seen that before, but I'm no expert. If you could just clear that up for me, I'd appreciate it. Thanks for another great recipe!

I just made these and my family went crazy over them! I made them in a 9×13, but that left them a little thin – so next time I will try the 9×9. Love your blog!
