Creamy Vanilla Pudding

One word: HEAVEN. Seriously, I love this homemade vanilla pudding. It is marvelous. It is smooth, rich, creamy, and perfectly perfect. My husband teases me about the fact that I savor every spoonful…. I won’t tell you if I actually close my eyes and sit back as I slowly enjoy the delicate flavor and creamy texture….. Let’s just say if I was videotaped it would be very embarrassing. :)
I remember requesting “Blancmange” for my birthday dessert instead of cake and icecream. That’s how much I loved this growing up and how much I still love it to this day! (We would call it blancmange as well as vanilla pudding; they are very similar so we used the terms interchangeably.)

Creamy Vanilla Pudding

1/3 c. sugar
2 T. cornstarch
1/8 tsp salt
2 c. milk
2 egg yolks, slightly beaten
2 T. margarine or butter, softened
2 tsp vanilla

Mix sugar, cornstarch and salt in a 2 quart saucepan. Stir in milk gradually. Cook over medium heat, stirring constantly until mixture thickens and boils. Boil and stir 1 minute. Stir at least half of the hot mixture gradually into egg yolks. Blend into hot mixture in saucepan. Boil and stir one minute. Remove from heat; stir in margarine and vanilla. Pour into dessert dishes. Cool slightly and serve warm. Refrigerate leftovers. Makes 4 servings.

What kind of milk do you use, skim, whole or 2%?

One of my all time favorites! This is definitely a recipe that practice makes perfect though…I remember many a time ending up with tiny cooked egg in my pudding! :) It still tasted fabulous though!!

We just made this and it is the best pudding we've ever had! My husband ate half and now I'm making more.

It would also be a great base for pouring over poundcake with berries, etc. Yum!

I made this pudding tonight for dessert. Both my son and daughter- who are super picky- asked for more. But sadly it was gone, my husband and I ate the rest:) They were practically licking their bowls. Have you doubled the batch with success?

Hi Kim!
I'm so glad that you all enjoyed this as much as I do! That has happened to me MANY times – where I want a second helping only to find out that it's all been eaten! And it doesn't help that my family loves this just as much as I do. Soooo, I have doubled this recipe A LOT. And it works great. Whenever I make it now, I usually double it! :)

I love checking out the recipes ya'll put here. I had to comment when I saw this one especially we grew up with the same Betty Crocker cookbook, I believe. The snickerdoodles were a staple at our house, and we were raised on Blancmange "hot slop" is what we called it. We ate it on pancakes and as an adult, I have eaten it with crepes and fresh fruit. yum.

What a fun comment! Yes, I'm pretty sure this is from the Betty Crocker cookbook (I ought to ask my mom for sure and then say that in my recipe introduction…). It had some awesome recipes! How fun that you have memories of this recipe as well! :)
