Sweet and Spicy Crockpot Chicken

This is one of my favorite dinners because it is soo easy and really tasty! Perfect for a busy night or a day that you don’t want to spend cooking in the kitchen. We love it in burritos, quesadillas, nachos and taco salad. I love that the recipe is so simple and uses ingredients that I always have on hand. Hope you enjoy!


Sweet and Spicy Slow Cooker Chicken

*Note: If you don’t want the finished shredded chicken mixture to be quite as “wet”, slightly drain the tomatoes before using them. Also, I nearly always double or triple this recipe because it freezes so well.

*Serves 4
1 pound (about 2) boneless, skinless chicken breasts
1 (14-ounce) can petite or regular diced tomatoes, undrained
1/3 cup brown sugar
1/4 teaspoon crushed red pepper flakes (add more if you like extra heat – with this amount it is mild enough for my kids to eat it up but spicy enough to help offset the sweetness)

Place the chicken in the bottom of the slow cooker. In a small bowl, combine the tomatoes, brown sugar and red pepper flakes. Pour over the chicken. Cover the slow cooker and cook on high for 4-6 hours or on low for 8-9 hours. Remove the chicken to a cutting board and shred with two forks. Return to the slow cooker and mix the chicken with the juices from the tomato/brown sugar sauce. Season with salt and pepper to taste. Serve in flour tortillas or over tortilla chips with toppings of choice: lettuce, sour cream, cheese, avocados, etc.

* This is a great Freezer Meal: I freeze the leftovers and let thaw in the refrigerator overnight before serving the next day. Reheat and serve. Easy!

This sounds amazing! I will be sure and try it. The other one we love is to take chicken breasts and add a jar of your favorite salsa and cook in the crockpot. I love using Mango or Peach salsa for the spicy sweet flavor. This sounds like it will be similar, but I won't have to look so hard for the peach salsa!

For Patty Ann–My family loves when I mix spicy salsa with peach jam and cook with chicken in the crockpot. I recently purchased an electric pressure cooker and I love it! I can make recipes like this one in 20 minutes–starting with frozen chicken breasts and the meat turns out so tender and not dry. The crockpot works great, too, but if you're like me and forget to start dinner early in the day…

Spicy chicken, I think I'll be giving this a go. Yes, we really need a break from red meats. I guess I'll just have to spice it down a bit for the kids. I love crockpot recipes. For me this dishes are life saving recipes on a really busy schedule. I mean you can just assemble it plug it in and forget about it until dinner, lol! For the meantime, you just go on about your daily chores.

This is the first recipe I've tried from this blog, and I have to say I'm glad I did. I decided to try it since the recipe was so simple (plus I had the ingredients on hand :-).

I have to admit that after I poured the ingredients in the crock-pot, I had some misgivings about the recipe… it just seemed too simple. However, my fears were allayed once I tried it. It was delicious- a perfect melding of flavors (I halved the pepper flakes, which was the right amount of heat for our family). I used it as an enchilada filler, which worked well (though next time I won't make it so "wet").

I will definitely be making this one again! Thanks for the recipe!

I have everything in my cooker going. I used a can of diced tomatos with green chilis in em' and only did a couple shakes of the crushed red pepper, then bro sugar. I am so excited for this recipe and can't wait to eat tonight. Going to eat it on soft taco shells with lettuce and cheese and sour cream and rice. Thanks so much for this page!
