Applesauce Pancakes with Cinnamon Syrup

Occasionally on Sunday mornings or when my dad was in charge of dinner, he’d make these fabulous Applesauce Pancakes.  As we’d start in on our short stacks, my dad could be heard from the griddle saying, “I don’t hear any Ooos and Ahhhs!”  And so we would immediately start “oooing” and “ahhhing” in our most dramatic voices.  But do you know what?  These really were worthy of our dramatic, giggling demonstrations.  They are absolutely delicious!  This recipe originally came from my mom’s old Betty Crocker cookbook.  But my newer version doesn’t include them.  What a loss!  We always ate them with Maple syrup growing up, but lately I’ve been making this recipe for Cinnamon Syrup that Erin gave me. I love the cinnamon apple combination.  I hope you like these as much as we do!

Applesauce Pancakes with Cinnamon Syrup

Printable recipe

2 eggs
2 c flour
1 c milk
1 c applesauce
1/2 tsp ground cinnamon
1/4 c vegetable oil
2 T sugar
2 T baking powder
1 tsp salt

Beat eggs until fluffy.  Beat in remaining ingredients just until smooth.  Heat griddle or skillet over medium heat or to 375 degrees.  (To test griddle, sprinkle with a few drops of water.  If bubbles jump around, heat is just right.)  Grease griddle.  For each pancake, use slightly less than 1/4 cup batter.  Cook pancakes until bubbly on top and dry around the edges.  Turn to cook other sides until golden brown.

Cinnamon Syrup

1/2 cup (1 stick) butter
3/4 cup buttermilk
1 cup sugar
1/2 teaspoon baking soda
1 tsp cinnamon

Place butter, buttermilk and sugar in a pot over medium heat. Stir until butter melts and sugar dissolves. Bring to a boil, and boil one minute. Remove from heat and add baking soda and cinnamon. It will bubble up; just continue to stir and give it a few minutes for the ‘fizz’ to reduce before serving.

umm….for extreme novices like me who need a recipe for evvveeerythinnnggg……how do you the syrup? do you just dump it all in a pan and cook it? boil it? Is there a method??

These were amazing and easy-my favorite combo. I used whole wheat flour with a bit more milk. Super yummy:)

We just had these for breakfast — they are delicious! We used white whole wheat flour, and reduced the sugar in the syrup — we'll be making these again.

I made these for my husband and I this morning. I think I have found my go to pancake recipe. they were delish and so nice and fluffy. I used brown sugar. I didn’t make the syrup though.
