I love cornbread! Cornbread muffins, cornbread pancakes, you name it! So does my 3 year old apparently. As it was cooling down on the stove, I turned around and saw him grab two big (well little in his case) handfuls right in the center of my beautiful cornbread and make a run for it! In his defense, I did let him make the cornbread (pour the ingredients in the bowl with a lot of adult supervision:) and he was very proud of “his bread”. I guess he wanted to be the first to test it out! Oh well it still tasted great. This recipe is very quick and beats the socks off those blue Jiffy boxes:) So if you have an extra 5 minutes to spare, because that’s literally about how long it takes to whip this together, give Aunt Sue’s cornbread a try!
Aunt Sue’s Cornbread

1 cup sugar
2 cups buttermilk
2 cups flour
1 cup cornmeal
1/2 cup oil (can add 1/2 cup applesauce to make it extra moist)
2 tsp. baking soda
1 tsp. salt
Preheat oven to 400 degrees. Mix together eggs, sugar, and buttermilk. Add the rest of the ingredients and mix well. Pour in a greased 9 x 13 pan and bake for 15 minutes. (It takes about 22 minutes in my oven).
