When my husband is working an evening shift, I usually forgo lengthy dinner preparations. So when it was dinner time last week and it was just me and kids, I decided to whip up the chicken filling from this taquitos recipe. We baked some of the aforementioned (and raved about) Costco tortillas and wrapped them up for a tasty and quick dinner. Sorry you don’t get a picture of the real taquitos! Maybe you’ll discover that you like the chicken filling lots of different ways, like me. :) I found this recipe a long time ago on The Picky Palate. It’s delish!
