Simple Roasted Butternut Squash

I love this recipe for Butternut Squash! It is easy to make, and delicious for a chilly Autumn night. I thought the small amount of brown sugar was perfect. It caramelized with the butter to form a lightly sweet” crust” and was so tasty with the fresh ground pepper! yum! This was wonderful! I actually doubled this recipe and roasted 2 squashes. I made extra so I could it use it for Butternut Squash soup.
Does anyone have a great recipe they would recommend?

Simple Roasted Butternut Squash

1 medium butternut squash, halved lengthwise and seeded
2-4 tsp butter
2-3 tsp brown sugar
Kosher salt and fresh ground pepper

Preheat oven to 400 degrees F
Place butternut squash halves on a baking sheet or dish. Place 1 tsp of butter on the middle and smear a little on the flat part. Sprinkle with brown sugar and season with salt and pepper. Roast for 25-45 minutes, until flesh is fork tender. (Mine took 40 minutes)

The butternut squash looks so good I'd have a hard time not eating it before making it into the soup! lol But I'm printing this recipe to try so heres hoping it makes it to soup!:)

Can you use the spray butter that has no calories insted of regular butter?

hello darlings.. i just had to hurry and comment because i've been whipping up your freezer meals all weekend long! lasagna, stuffed shells, cornbread and more are in my freezer. they have all tasted delisch so far! thanks for the great resource and fabulous recipes. mmm. mm.

I love butternut squash baked this way. I still have some squash, so I think I'll have to bake them for dinner tonight!
Butternut also makes a delicious pie.

If any of you live by a Carrabba's, they had a seasonal dish on their menu right now… Butternut/Pumpkin Ravioli.
I LOVED IT!
It's on the appetizer menu, but learned after dinner I could have ordered it as a meal too.
Highly recommend!

I love love squash! I am excited to try this. I have been meaning to post my fav way to make squash and even took a picture of it. Maybe I'll post it next week. In the mean time, I am trying it this way next. Thanks for the idea, Mel.

Good squash! But I'd line the pan with foil first, because the brown sugar burnt onto the pan and now its really hard to clean.
