Root Beer Float Cookies

Root beer is my favorite pop! Maybe it is because I have so many childhood memories of enjoying frothy ice cold root beer floats during a family game night or after a summer day spent playing in the sun. So when I saw this recipe for Root Beer Float Cookies, I just had to try them! They are small cake-like cookies. Fun and different, and a must try for those root beer lovers out there.

Root Beer Float Cookies

Recipe Source: 101 Gourmet Cookies via My Nutritious Dish

3/4 cup sugar
3/4 cup brown sugar
1 cup butter, room temperature
1/4 cup milk
2 eggs
2 Tablespoons root beer concentrate or extract
4 cups flour
pinch of salt
1 teaspoon baking soda

Cream together sugars and butter until light and fluffy. Add milk, eggs, and root beer extract. Stir to combine. Add dry ingredients and mix until combined. Refrigerate dough for one hour until firm, then roll into one inch balls. Place on a lightly greased cookie sheet (or use a silpat like I did). Bake at 350 degrees for 8-10 minutes. Remove from the oven and cool completely before applying glaze.

Cream glaze:
2-3 Tablespoons heavy whipping cream
1 1/2 cups powdered sugar
1/2 tsp vanilla

Whisk all ingredients until all lumps are gone.

These sound REALLY good!! Rootbeer floats are my favorite summer time treat, too :) Great idea to make them into a cookie :)

I have so many fond childhood memories of root beer and root beer floats too! When I was a kid we used to go to this farmers market all the time that had this big tub of coke and root beer sold in glass bottles. We were always allowed one for being good! It was such a special treat!

That sounds amazing!! One question though, I live overseas and I can't even get almond extract over here, not to mention root beer extract. Any substitutions, like maybe real root beer? Silly question, I know, but I want to make these!!!

I looked today at both of my local supermarkets and neither carry root beer extract. I can buy it on-line (and pay more for the postage than for the extract), but any suggestions where I might find it locally other than a supermarket?

Hi Melissa,

I am not sure how it would work to substitute root beer pop for the extract. I don't think the root beer flavor would be as strong. Maybe if you swapped it for the milk? I just don't know. If you experiment, let me know how it goes!

That is a bummer about your grocery stores not carrying root beer extract or concentrate. Mine carries like four different brands! They are by the spices, artificial flavoring, extracts. I wonder if it is more of a seasonal product for some stores. Maybe ask the store manager if they get it in for the summer. I saw some for sale on ebay if that helps!

I totally love root beer floats and can't wait to make these! They would also be yummy for a summer treat with vanilla or root beer ice cream between two cookies.

Our Walmart carries root beer extract,
and it's weird I know ~ but so does our local
"mill and feed" store. They carry it because along with the the grains for growing, animal feed, plant supplies and tools, they have a home brewing section with glass bottles and canning supplies. They carry 5-8 varieties of soda flavored extracts.
You can also check at the sporting good stores like
"Sportmans Wearhouse". They carry a rootbeer making kit next to the cast iron cooking section… so they have the "refill rootbeer flavor" for the kits.

It's bazaar where you can find the stuff. I live in Alaska where variety is ~tre limitado~ so I bet a bit of hunting could produce good finds wherever you are!

I love these cookies. I have gone through one bottle of extract all ready. I like the Hines brand the best. I am going to try using applesauce in place of some of the butter. Should make them just a little lighter on the figure.

I tried these months ago when you initially posted this recipe. I could not find the root beer extract where I live, so I bought some on-line. The brand is “Cook’s.” The results where ok, but not over the top. Today, I felt a bug to bake something and had recently found the “Watkin’s” brand Root Beer Extract in my local markets. I made them for the second time and WHAT A DIFFERENCE!!!! The “Watkin’s” brand is so much more flavorful. But oddly enough, the first time I made the cookies they came out dark brown….root beer color. With the “Watkin’s” extract, the cookies were blonde. Who cares??!!!! The flavor is incredible! Anyway….thanks again for the recipe…I never would have come up with this one by myself.

Pauline, you have me totally sold. I feel like I now HAVE to find Watkins and make these cookies ASAP. I used McCormick’s when I made them, but I have bought Hires brand root beer extract since, and I like it so much better for root beer that I have been thinking I have to give it a try, too. I have made these over the years, but never like this. I can’t wait to try it.
We use Zatarains Root Beer extract – they are out of New Orleans. It is soooo good. I don’t know if it’s sold only locally (in Alabama Gulf Coast), but look for it.
