My 10 year old son Coleman and his best friend Kollin hosted a Cookies for Cancer Bake Sale yesterday in our neighborhood. I was so impressed with their efforts for such a good cause. They were able to raise $63.72 for children’s cancer research. They were so cute that anyone who drove by wanted to help them out and buy a cookie or two. Although the bake sale is over, you can still be part of the fun and help in this fight to find a cure for childhood cancer. Go here to exchange a virtual cookie with a friend and Glad will donate $1 to Cookies for Kid’s Cancer for each cookie sold, exchanged or given this month–up to $100,000! Awesome, huh?!
When we were at Vanderbilt Children’s Hospital for my sons heart procedure I saw many little children that were fighting cancer. It about broke my heart. I hope that we can find a cure for that horrible disease soon! I have been told that what is needed the most is funding for cancer research and that every dollar counts! I hope you will take a moment to virtually exchange a cookie here, knowing that each time you do, Glad will donate $1 for such a worthy cause!
Here is one of the cookies we offered. A super delicious, quick and easy recipe. With only 4 ingredients it was the perfect cookie to make with 10 year old boys!
Flourless Peanut Butter Cookies

1 cup natural peanut butter
1 cup sugar
1 large egg, lightly beaten
1 teaspoon vanilla extract
Coarse sea salt
Preheat the oven to 350 degrees F and place racks in the upper and lower third of the oven.
In a medium bowl, mix the peanut butter, sugar, egg and vanilla until well combined. Spoon 1 tablespoon of mixture about 1 inch apart onto ungreased baking sheets. Flatten the mounds with the tines of a fork, making a crosshatch pattern on the cookies. Sprinkle coarse salt on top of the cookies.
Bake until golden around edges, about 10 minutes, switching the position of the pans halfway thorough baking. Transfer to racks to cool. Repeat with the remaining dough.
